Brining bait is the process of
immersing bait fish in a
solution of salt and water to enhance the bait's durability and
stiffness. Anchovy is a very delicate bait fish, so for best results
this fish should be brined in an 85% salt solution for a minimum of 4
hours. Over-brining will result in a bait fish that has a rough leather
finish reducing its reflective quality.
- Cut the package of bait while frozen, and allow
it to
thaw.
- Sprinkle 1/4 cup of brining mix on one 8"x10"
tray of bait, split between on both sides of the bait.
- Keep in a cool place out of the direct sunlight

Let the bait sit; at least four hours, up to 12 hours.
- Add 2-3 cups of water, salt or fresh. Once the
Salt disolves, you should have a solution with ~85% salinity; your
solution is at 85%
when a piece of potato will just float, or remain suspended.

Let the bait sit overnight in this solution, up to 16 hours. Once brined, bait can last
up to 3 days.
The same steps apply to brining larger quantities of fish, simply
increase the amount of water and salt used.
